Pinakbet, also known as Pakbet, is a traditional Filipino vegetable stew originating from the Ilocos region. This hearty dish combines a variety of local vegetables such as squash, eggplant, okra, yard-long beans (sitaw), and bitter melon (ampalaya) with protein sources like pork or shrimp. The stew is flavored with bagoong—a fermented seafood paste—although the Tagalog version uses shrimp paste instead of the traditional fish-based bagoong.
